Auntie Anne’s Holubsti (Cabbage Rolls)

Ingredients

  • 1 medium head cabbage* (see note)

  • 1 large onion

  • 2 Cups White Rice (uncooked)

  • 10-12 slices of bacon, chopped

  • 1 - 28 oz can diced tomatoes

  • 1 can tomato soup

  • Tomato juice

  • Lard

Lettuce Cook!

Step 1 - Boil whole cabbage in water for 20 mins. *(You can proceed with recipe at this point but it is best to boil and freeze cabbage a few days before filling. Remove and defrost 3-4 hours before filling. The leaves pull apart much easier).

Step 2 - Preheat oven to 350 degrees F (175 degrees C).

Step 3 - Cook bacon in large frypan. Remove from pan. Cook onions in a bit of lard or bacon fat. Add uncooked rice, diced tomatoes and bacon and continue to cook another 10 minutes or so.

Step 4 - Peel leaves from cabbage. Fill each leaf with approximately 1/2 cup of rice filling. Roll leaves, tucking in corners.

Step 5 - Mix can of tomato soup with 1/4 to 1/2 cup of tomato juice. Spread a thin layer of soup/juice mixture on bottom of a 9 x 13 inch baking dish. Put cabbage rolls on top. Pour remaining soup/juice mixture over top of rolls. Cover with foil.

Step 5 - Bake in preheated oven for 1 hour to 1 1/2 hours. You can remove the foil for the last 15 minutes of cooking. Watch that they do not burn.
