Prep Time: 30m | Cooking Time: 60m | Total: 90m plus overnight soak time for split peas
Serves:8-10

Ingredients

  • 1 1/2 lbs yellow split peas *(soak peas overnight in large pot covered in lots of water).

  • 2 large onions, chopped

  • 2 - 15oz cans whole tomatoes

  • 1 (32 ounce) jar sauerkraut, drained and pressed

  • salt pork (use bacon fat if cannot get salt pork)

  • butter for frying onions

  • salt and pepper to taste

Lettuce Cook!

Step 1 - Wash split peas and place in large pot. Cover with lots of cold water to soak overnight.

Step 2 - Drain split peas and rinse. Place back in pot and cover with water. Boil for approximately 2 hours until tender and softened. When cooked, mash slightly with potato masher.

Step 3 - Drain sauerkraut. Rinse and squeeze to remove moisture. Pour hot water over and rinse and squeeze again. Do this at least three times to get rid of the sourness.

Step 4 - Put sauerkraut in a large pot. Add tomatoes and one chopped onion. Add enough water to cover. Let simmer for 3/4 of an hour.

Step 5 - Add cooked split peas to sauerkraut.

Step 6 - Chop salt pork and fry in butter with second onion adding some bacon grease and 6 tbs of flour and brown. Add to sauerkraut and split peas and simmer approximately 30 minutes.
